Vegan Peanut Butter 'cup' Hearts


I have been wanting to attempt a recipe for vegan peanut butter cups for 
awhile now (this was my first attempt) 
and thankfully, it was much easier than I anticipated! :)

When I am in the mood for a special chocolate treat, these are a great vegan alternative to the conventional Reese's brand Peanut Butter Cups.

They are dainty and small - just a mouthful - perfect for those little creeping cravings if you are transitioning your diet or currently trying to lose weight or anytime! 

My daughter loved them 
they are officially "kid-approved"!

What you will need: 


1/4 cup Vegan Chocolate


 1/2 cup of peanuts


1 Candy Mold:

*Find at any craft store or Wal-Mart
(shape of choice) 
 I have several and 
chose hearts this time.

few tbs. Extra Virgin Olive Oil 

A few pinches of Himalayan Sea Salt
(I get mine bulk @ the health food store)

**Also: a small pan, glass bowl 
and stirring spoon, in which to melt 
the chocolate for a "water bath"


Step 1: 

Blend peanuts in blender or food processor 
until smooth with a 1 tsp. sea salt

Step 2: 

Fill pan about 1/4th full with water, put on med/low burner. 
Then place glass dish with chocolate 
and 1 tbsp of olive oil in dish. 

Place dish inside water bath. 
Stir constantly until smooth consistency. 
(Add a dash more oil, if it turns lumpy.)

leave on very low heat, and stir every once in awhile to keep chocolate smooth.

Step 3:

Take tiny spoonfuls of chocolate mix (enough to fill the molds 1/2 way)
push with fingers all around to fill the mold shape. 
Fill the whole mold tray with 1st layer of chocolate.

Step 4:
Add Peanut Butter-

Take tiny spoonfuls place on top of chocolate, almost to the top, push around with fingers spreading over chocolate layer
-dip your finger in a bit of oil if it gets sticky.



Step 5:

Repeat step 3, just with a thinner layer of chocolate over the "bottom".

Place filled candy mold tray into a quart size zip lock bag, seal it as best you can,
then place bag into freezer for 10 minutes.

Remove bag from freezer and place into refrigerator for 5 more minute.

** They should now be set! **

Remove the tray, and start popping the candies out of their mold 
then place onto a chilled plate.

-Add dashes of H. Sea Salt on top for garnish and to bring out the sweetness of the chocolate.

- Store in the fridge for a delicious treat and share with friends!
